Rice and Nut Stuffing

 
An aromatic and savoury stuffing, ideal for a plump Christmas turkey.
 

10 oz cooked brown rice
12 oz minced pork or pork sausagemeat
Handful of finely chopped parsley
2 oz toasted flaked almonds
Juice of one lemon
1 tsp dried mixed herbs (try herbs de provance)
Salt and pepper

  • Place all the stuffing ingredients in a bowl and mix well.
  • In a 9 lb turkey you would use about a third of the mixture to stuff the neck cavity and roll the remainder into balls.
  • Place the stuffing balls in an ovenproof dish and chill until you are ready to cook.
  • Near the end of the turkey's cooking time, you can pop the stuffing balls into the oven and bake for about 25 minutes until they are golden.
