As
you are peeling potatoes for your main meal,
give them an extra good wash first. Seperate
those which have unblemished skin and save
the peelings from these unmarked potatoes.
- Drop
the peelings in a pot of boiling water and
boil for about four minutes.
- Remove
from the water and drain well.
- Drop
them into a deep fat frier and cook until
crunchy.
- Drain,
season and serve.
