Crunchy Potato Skins

 
Crunchy potato skins can be served on their own like crisps (or potato chips), with a dip. They are great scattered over a salad and make a popular snack for the kids. They are literally made from potato peelings so are ideal for the frugal food fanatic.
 

As you are peeling potatoes for your main meal, give them an extra good wash first. Seperate those which have unblemished skin and save the peelings from these unmarked potatoes.

  • Drop the peelings in a pot of boiling water and boil for about four minutes.
  • Remove from the water and drain well.
  • Drop them into a deep fat frier and cook until crunchy.
  • Drain, season and serve.
