Chive and Potato Cakes

 
Chives are related to onion and garlic and add a tasty twist to these potato cakes. They can be made with leftover mashed potatoes but they are so good, you won't mind starting from scratch. The mashed potatoes aside, the Chive and Potato Cakes can be ready in less than 15 minutes so would be ideal for breakfast with a couple of rashers of bacon and some fried mushrooms or have them as an afternoon snack.
 

1 lb potatoes
1 cup of plain flour
2 tbsp olive oil
2 tbsp chopped chives
salt and black pepper

  • Unless you have leftover mashed potatoes start by peeling the potatoes, cut them into roughly even sizes and boil in salted water for 20 minutes.
  • Remove potatoes from the heat, drain them and throw a knob of butter into the pot.
  • Mash the potatoes, working out any lumps.
  • Add oil, flour and chives to the mashed potato, season with a little salt and pepper.
  • Mix until the mixture becomes soft and doughy.
  • Heat a little oil in a heavy frying pan or skillet until it is hot but not smoking.
  • Seperate and mould the potato dough into 6 patties and cook them in the hot pan for about 7 minutes each side until they are toasty golden brown and cooked right through.
