Carrot and Courgette Muffins

 

I have to confess to never having tried this one... something about the carrot/courgette (zucchini) mix seems a bit too spartan. If anyone would care to review this recipe, I´d be very grateful for your opinion.

 

 

1/2 cup oat bran
1 cup white flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup sugar
1 egg
2 egg whites
1 tbl vegetable oil
1 teaspoon vanilla
1 1/2 cups grated carrots
1 1/2 cups grated courgette (zucchini)

  • Preheat oven to 400º.
  • Mix together oat bran, flours, baking soda, cinnamon and salt.
  • Set to one side.
  • In another bowl combine the sugar, egg, egg whites, vegetable oil, vanilla, carrots, and courgette.
  • Combine the dry ingredients with the wet ingredients, stirring until just combined.
  • Bake in a greased or non-stick muffin pan for approximately 20 minutes.
  • Turn out onto a rack to cool.
