Carrot and Courgette Muffins

I
have to confess to never having tried this
one...
something about the carrot/courgette (zucchini)
mix seems a bit too spartan. If anyone would
care to
review
this recipe, I´d be very grateful for
your opinion.

1/2
cup oat bran
1 cup white flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup sugar
1 egg
2 egg whites
1 tbl vegetable oil
1 teaspoon vanilla
1 1/2 cups grated carrots
1 1/2 cups grated courgette (zucchini)

Preheat oven to 400º.

Mix
together oat bran, flours, baking soda,
cinnamon and salt.

Set
to one side.

In
another bowl combine the sugar, egg, egg
whites, vegetable oil, vanilla, carrots,
and courgette.

Combine
the dry ingredients with the wet ingredients,
stirring until just combined.

Bake
in a greased or non-stick muffin pan for
approximately 20 minutes.

Turn out onto a rack to cool.
